The problem isn't so much the o2 bungs but the size of the 6speed cover.
I'd also wait until PCIII's come out. Most people say to hell with the sensors but me personally want to keep them. EFI is setup to make changes depending on conditions and how the bike is running, you take away the o2 sensors you loose that ability.
You're other option would be slip ons. I was going to get a set of V&H's but decided I'll wait until a set a true duals come out.
Bassani does have a set of 2-1's for 07's already out I think.
Good luck with your decisions. Maybe some guys that have already changed out their exhaust can give you more info.
You see my problem is that I love the way those pipes look, so I speak to the dealer yesterday and he tells me theres no way to keep my pipes if I want them louder. I dont know if I believe that or not but I'm going to keep on looking. It does sound quite as hell, but I'm begining to actually like it---I'm sure that will quickly go away when there are options out there.

You could cut/burn out the baffles, but you would not like that sound.
Check with Bigcitythunder sooner or later they will make baffles for it.

Don't worry Enzo...
Give it a few months, and you'll want to change something, and all of the pipe makers will have the 07' modifications done..
You'll find a different set of pipes for that rig that will knock you out.
The one thing I don't like about the shot gun pipes is that they cover up the whole rear wheel, and you have a nice wheel & floater on there.
For your bad azz bike, these are hitting me, and I know they have plenty of sound..:
hey nestor do have your Springer SE with you now?? cause I asked for it at my local dealer in Guadalajara, Jalisco, Mexico and told me they did those bikes until october/november and that a blue will be arriving on december, but I like the yellow one which they say wouldn´t arrive until Jan 07. So was was looking for the option of buying it in the US and importing it my self, the problem would the the warranty, but you know how does it feel to waitmore than 3 months for that incredible bike.
So I haven´t make a first payment to separate one, I guess you highly recomend it right??
Whats color did you get?? got any pics??
