Looking at a used 2008 SERK (110") with the following build

bub true duals pipe (Tru-dual7)
screamin eagle hi-flo air intake
HD Race Tuner
58mm throttle body
HD hi-flo injectors
Dyno tuned at the dealer

Any thoughts on this set-up?

Not sure you need the 58 mm throttle body and high flow injectors without doing cams and head porting to match.
I just went through a steep learning curve by doing a similar build on my bike. With stock heads, compression and cams the 58 mm throttle body isn’t helping much.
Should you want to do all the other work then I could see using it.

One other note, the 58 mm throttle body is kind of a bastard. The only true 58 mm air cleaner is the Harley one. Should you want an after market you would need to modify it.
