I'm pretty sure that the 78 Superglide had the V-Fire Electronic ignition. Cooling down and then restarting was typical of this unit.
As stated earlier, that would be incorrect. Very specifically Harley did not switch to electronic ignitions with a mechanical advance mechanism until 1978 and a 1/2, hence, one of the reasons for the goofy half year thing.

You can call MoCo and with VIN and belly numbers they can tell you the assembly date.
If it's had a " ton of work done " doubt the electrics are anywhere near stock anymore . You said it's been painted ? I'd start by making sure the cross over & vent lines nipples aren't plugged up , happens more than you think also check the gas caps to be sure the right or vented cap isn't plugged with crud or rust . Any of those will cause he bike to starve and shut down in a few miles but will restart a while later . If he put an inline fuel filter in lose it the petcock has one remember they can cause vapor lock . You also said the fuel system was rebuilt ? If a cheapy petcock was put in try the reserve position this opens both ports at same time internally , had a few of these been bogus new out of the box .
Run it till it dies then check does it have spark ? carry an extra plug and just check each wire while grounding the plug on the head , if it has spark do everything above if it doesn't do everything below .
Next check the circuit breakers , wire around the ing. one and see if that stops the problem , old bikes these are a headache replace them all they are cheap . They get hot and drop out can drive you nuts chasing that fault also I've seen more than a few coils do this too . They will run fine till hot then lose it , check the factory service manual on this there's a good section showing how to meter test all this .

Eventually took it off the street and turned it into one of the fastest gas powered N/A Harley dragbikes of the day. And nope never got no press or anything like that, we only raced locally for fun, but I knew and talked to the Hausler brothers and the crew over at Zippers, we all had the fastest gas Harley's at the time.
Just one more quick thought. Are there any rubber o-rings or washers in any of the metal-to-metal connections in the fuel line systems.
Only reason I bring it up...have a 49EL I am getting back on the road. Don't have the money for the correct all meatl lines and am using an adaptor set up with rubber hoses. The steel connectors came with a rubber washer that was supposed to be used. Get it running but dies...won't stay running. Let it cool down cuz the leg is tired from kicking. Repeated starting process, fires up dies again and again.
Thinking float bowl, carb setting, $hit in the gas tank. Clean and check everything and add in-line fuel filter. Start and dies again...
Decide to remove hose from Linkert, open fuel valve and see if gas is coming out...nothing happeneing.
Turns out that the rubber between the steel adapter connections was swelling up with the gas and blocking fuel from leaving the tank. Took out the damn thing, fuel comes out as it should. Gonna go out today and start again to do some final adjustment on the carb and hopefully put it in gear and tale around the block.
Sorry for long post but sometimes its the 'little' things that bite you in the butt.

Good point the ethanol content in gas has gone up and that stuff attacks straight rubber .

Been to Zipper's in MD those boys do know go fast . My old girl is healthy at 11-1 & 93" even with the big starter I'll kick her when cold , that FX battery just doesn't have the *** to do it and I won't go the bigger FL need the extra room to hide the air pump for my shocks .
