2 things, in your last video it's idling WAY to slow. You need it idling real close to 1K or you'll starve it for oil. You can get by with 950^, but your way lower than that. That will probably solve your stalling issues as well. The other thing is when you made your map 10% richer, you probably went to rich. Try like 3% and see what it does. When you go to rich it will make the idle rougher, and you'll suck to much fuel. When you can get it dyno tuned, and if the tuner is good you'll love the results.
Just to add to your comment on oil pressure and idle, while I've only got a 'puny' 103" I do have an oil pressure gauge and have experimented with different idle RPM's via the Power Vision. At a -100 you won't have a reduction in idle oil pressure; at a -150 you will begin to see a drop in idle pressure, and at a -200 the pressure was so low it didn't move the gauge needle.
My idle is at 850 - 950 RPM and the idle oil pressure is the same as the stock 950 - 1050 RPM and based on what I've observed I don't recommend people lower their idle more than a -100. Battery charging voltage is a solid 14.40v - 14.50v at a -100 idle, as well...
Made suggested changes and took it out and did another 50 or so....
No problems during the first 30 or so. I even tried to make it fail... nothing. Thump thump thump.
there was funny business later in the ride again. Cane out of the back roads to an intersection and dropped to first and the rpms fell off a cliff... bike shut off. Pulled the hold the throttle nonsense again and went on my way. Tested the rpm drop while rolling. .. if i pulled in the clutch, engine would die. This continued for duration. ..until i pulled into the driveway. .. bike stayed on... wtf?
went back to the 103 tune and did 100 auto-tune miles... no shutting off. bike is stable. swung by the dealer and negotiated a sweet deal for both bikes to get dyno'd. then hopped on my sportster for 2 hours... good day off
The engine temp sensor situation seems to be under control, for now.
After the first CEL related to the engine temp sensor after the 110 went on, i pulled the terminals and sprayed both sides with electrical contact cleaner then some dielectric grease. Not a peep out of the CEL since.
