Its been discussed at length here. It seems the widths differ slightly depending on manufacture. I've read some guys have fit a 260, while others went with 250s. For sure 260 is as wide as you can go before you need to make some major modifications to the swing arm. You'll at least need to remove the belt guards with a 260.
If you search the forums you'll find quite a bit of info on it and what has worked and not worked for some guys.

As you said it depends on the make of the tire...I just got a Metzeler 260 tire installed and it works fine WITH belt guards...no need to remove them. But according to my mechanic the Metzeler 260 only is 7 mm wider than the stock 240 once on the rim.
I'm rear tire shopping for my Ultra today. It kills me I have such a big bike with a 113 CI S&S motor and looking at the tires I have to walk past the cool big tires and look at the tires that to me look like front tires.
That's no help to you is it? My bad I guess I just needed a place to vent that.
well it was more a curiosity than anything i just put a brand new 240 on the rear from a recent puncture. but i saw a few customs with the 300's and just got curious.

Was that an 880 or an 888? I just had an ME880 (240) put on mine and it required zero weights! It was made in Germany, but I've read that their tires from South America are not so good on quality control.

In my rocker i can install a 260 metzeler without problems. In your beakout, also you can install a 260.
If you want a tire more bigger, you must spent a lot of money in modifications in swingarm.
