I was in a similar situation, with my FLS, I did the rear fender (klockwerks) was going to have it painted to match to the rest of the bike, (candy orange) with a little prodding from my GF and a suggestion from the painter The whole bike is getting painted! Included the factory bobbed fender. I hope to have it back fairly soon I went with an old color whimbeldon white with a distress look and a candy (root beer) being added for the seams and edges
the slim brings a style from years ago so I started looking a a lot of the older retro colors and styles. I'm a big fan of the west coast 80s style bike (California Custom) kinda pre Vicla, I viewed a bunch of YouTube videos of bikes by hunting Harley's

Your bike looks awesome blacked out! just about anything will work with what you have done so far!

Good advice. Just got my 2002 Fat Boy back from custom paint & artwork. But I've had it since new in April 2002 so I'm pretty sure it's not going anywhere. Same thing with my wife's 2005 Deluxe. Custom paint & artwork. But the only thing that will part her from that bike will be death.
To the OP: You're in Wisconsin, so probably not riding this time of year. But if your painter has a bunch of work stacked up and will be some time getting to it (the case with our painter) you might want to consider buying another tank to go with your new fenders so as not to have all your stock stuff removed and lose any riding time.
I had my Fat Boy painted back in 2004 and that's how I did it because it was during riding season. Bought sheet metal from ebay and had it sent out for paint while I continued to ride.

I too am on the "Go Custom" route since you're halfway there. Now, I love the look of all black paint. However, more than half of all HDs out there are black. Mine was black when I bought it. I decided to spring for custom paint and went three tone. Black, dark candy green, and brushed metal. I plan on keeping the bike a long time, so the cost was irrelevant as far as resale value goes. That part is something you have to decide for yourself.

I have a FLS S in the olive gold. I like the olive gold but not the army star. I am a US Navy vet. So I am having a scallop paint job done on the tank. Since most of the bike is blacked out, I am going with black paint with a cream color pin stripe. The tank is still with the painter but here are a couple of photos of the lay out.
