OK, I'll bite.... did this used to be your bike? Do you know the prior owner?
Carb has the EPA plug on the mixture screw, doubt it's been messed with.... unless someone tried to re-jet without adjusting the mixture..
Plan on keeping it at Stage I, but if I go cams, Andrews gear drive cams will be at the top of the list...

Damn sure can't get ethanol free gas in CA.....
I had to look just for fun.......
I found a web site that supposedly shows ethanol free gas stations across the country.... There are 5 stations that carry ethanol free gas in CA... 3 of them within 60 miles of Eureka (way, way north) and 2 about 30 miles north of Paso Robles.... no ethanol free for me in SOCal.....

There are quite a few more stations than the five you described. Not that I would call EFF common or convenient. But available.
I say, jet for what you got. And get new fuel lines that accommodate what is now the norm: Ethanol-Laced Fuel.
Oh, and nice Springer, my brother!
