On the 1000 mile service on a new bike, Harley changes the oil, filters , adjust valves and whatever needs to be adjusted.I told them I would bring my own Amsoil but they told me I had to use Harley oil. Is this accurate information for warranty coverage ?

Go ask a different dealer.
No, I don't think that is accurate as long as it the proper weight, but some dealer can be a pain inbthe ads like that and can tag your vin. So go find a dealer who won't screw you

Welcome to the forum from Texas.
One of the stipulations of the Magnuson-Moss Warranty Act specifically designates that a manufacturer cannot require you to use their branded products to maintain the warranty.
So, the dealer cannot force you to use Harley oil but that doesn't mean they can't refuse to put your Amsoil oil in the bike. If they did put Amsoil in it would not affect the warranty.
If your dealer won't use the oil you want find another dealer who will.
Should be no reason for a valve adjustment unless replacing a bad lifter/rocker arm or a rebuild, the lifters are hydraulic thus self adjusting. I would verify that they were adjusted with the service manager, Just my 2 cents. I personally use SYN3 and Formula+ but I fully agree with Bone Doc's post, should be your choice.
There's no value adjustment required and oil is your choice , i do use syn3 in the engine but Amsoil in the primary and transmission i pay a few bucks more for the Amsoil with the 15K service plan
