This might be a dumb question but cant you just disconnet the wires from the connector plug without having to cut the wires?

Yes, you can pull the pins from the plug.

Is there a way, to run the nut on the inside of the accent strip and press (screw) the signal close up against the outside of the accent strip?

This would hide the nut, and (hopefully) give a more streamlined look.

I think the accent strip would then stick out too far and look weird. I actually removed this setup from my bike yesterday and installed a light bar.

It's under the tank. I slid mine back a couple of inches to get at it, piece of cake. De-pinning plugs and doing it right the first time really isn't a big deal.

Mine were cut and spliced because I had lengthened them for apes, then had to shorten them for the relocation. Otherwise, pulling the pins would be the way to go.
