dual disc front brakes?
Personally, I can lock up my front wheel if I wanted, so I don't think your problem is a lack of disc area.
You can change pads, master cylinders, brake lines, calipers, discs etc. to change your brake feel.
I run an Xtreme machine Saw blade floating rotor with a set of Lyndall pads.. everything else is stock.
Lug (side mount) mount calipers deflect (stock Harley's) much more than a ridgedly mounted radial brake but that is another thing. As far as dual rotors/brakes, the reasoning behind that is due to the conversion from velocity of mass to heat. This means the more weight you have such as a loaded down camping bagger VS a 250# 2 cycle dirt bike would determine the number and size of the rotors/calipers.
If you go around corners (lots of them) than, naturally, you would need more rotor to cool off. Heat is what makes brakes fade. Another consideration is how wide is your tire. A stock 21" or 19" tire is much narrower than a "Baggers" (I use 17" X 140mm front) so there is much less rubber to grip than a wide tire. I hope this helps you decide how to proceed.
This is a photo of a project I just completed using (2) 320 mm Metal Matrix Ceramic (2.2 lbs/ea), Radial calipers, fully adjustable inverted front end, Carbon Fiber wheels 4.2lbs f/4.7lbs r, MMC 11.5/rear 1.6 lbs, and Penske Shocks.
Changing out the pads to kevlar based Lyndall pads, along with a heat dissipating floating rotor will give you everything you need to stop a truck..

And also like mimo said it cost less (no extra fork modifications to add another caliper
