i had the same problem and was considering the same choices as you when i traded my 05 1200c sporty. i ended up goin for the heritage softail classic. Way more comfortable for rider and passenger than the fatboy and especially the nightrain. Also much better equipped out of the box.
I think the stock seat on the Fb is much more comfy than the one on the NT, which is not comfy at all for a passenger.
And in case you'd like to put a more comfortable seat, or a touring seat, then a certain model of seat will probably always look smaller on a FB than when mounted on a NT.
So, if you want to please the wifey, I'd choose the FB.
Same frame, same fender supports the difference is going to come down to seat and backrest. If her passengering is going to come down to the occasional weekend jaunt, a Night Train with a quick detach sissy bar and a comfy seat might be the best choice. With practice you can add/remove a sissy bar and change the seat in under a minute.
Daily, I use a sidekick seat, it OK around town, but the wife hates it for more than one hour. She is a small lady with a small butt. I bet a the bigger a girl is the more they hate small seats.
It does not matter on a night train for a fatboy, the sundowner seat and detachable backrest looks like crap. I even had my sundowner recovered in leather and stingray. I now have an expensive ugly *** seat.

Bolted on a Larosa solo seat and decided to become an "Faux" Outlaw (Albeit an Outlaw with a sore ***!)and called it day...
