Waiting a month or two is no problem for a bike I'll have for years. And if I buy an '06 and the '07 comes out with a 6-speed I'll have to have my *** kicked. But I might save a few bucks by going with the '06, that's a fine counterpoint.
Well for me it was an obvious choice as I had to have a carb no fuel injection for me, not a chance. If you want efi though Id wait till next week as the info on the 07's will be released by then. ...and there is a chance of 6spds and larger displacement, along with the possiblity of added emission controls and catalyst mufflers. The 06 softails have no catalyst muffler at least the 49state ones, theres probably a fair chance catalyst mufflers will be on the 07's.
Your only a few days away from the release of the 07 info...I'd wait until then. However you might be able to get a pretty good deal on the '06 after the '07's come out. My last bike had a carb and my Heritage is EFI...I'll never go back. Being able to adjust your air to fuel ratio in 250 RPM increments is pretty nice.

For '07, chances of a six speed for the softtails are pretty good - although the safe money is on the 6 speed tranny making it to the touring line first. The entire Dyna line moved to the 6-speed at the beginning of the '06 model year and it looks like the moco has worked through the initial "growing pains" (15k bearing replacement no longer necessary, neutral indicator recall completed). It really is a sweet transmission and gives you just a little more headroom on the highway.
Having owned both carbed and EFI Harleys, I don't know why anyone would want to go back to a carbs. Being able to start the engine up at ANY temperature and have it run flawlessly - without having to play the "choke ballet" is a killer feature (at least IMHO). Also, EFI models have the 3-stage heat management functionality.

Since the question is asked why would anyone want carb. , Ill gladly answer. First off no fuel pump to fail, this is a rather common failure on efi cars for no start conditions. I work in the automotive warranty industry and out of 40 or so mechanical claims I handle per day I average at least 1 fuel pump repair, they do fail and when they do they often disable the vehicle. So to not have a fuel pump to fail more than makes up for the need to adjust the choke which is no big deal and to me I enjoy that minor adjustment on cold starts-keeps me in tune with my motorcycle.
Carbs all the way If you like tinkering with your bike and enjoy tuning it. If you like taking taking your bike to the dealer to replace everything, even your headlight bulb, then go EFI. You'll more than likely stuff something up!
You say you average 1 fuel pump repair per day but how many cars are there out there total that are EFI?
And you neglected to state how old these cars are and how many miles on them.
I grew up in the 60's & 70's and I was one of those big Mopar fans you know 6 packs and dual 4's I raced at drag strips so I do know carberators and let me tell you If I could get EFI on my lawn mower I would.
EFI the only way to go.
