A friend of mind just added some 1" riser extensions to his setup. I even have a pic. That being said he is 6'3" or so. Looks closely, they are there behind the fork bag.
Like Story said you can get away with about 8" or so of Rise and 6" or more of pull back with the stock cables. That gives you a fair bit of choice. I found for myself that I wanted to keep the stock look because that's one of the styling cues that attracted me to the bike in the first place. So I set out to find something that would look the same but give me what I thought I needed. I ended up with Wild 1's Chrome 1 1/4" Drag bar and 6" Risers http://www.wild1inc.com/orderWO511.html
I'm 6'4 and this combo has me sitting more upright with less of a reach and my arms are wider apart. I can use my mirrors now and it's a lot more comfortable, particularly on longer rides. I love how they look and even though a 1/4" doesn't seem like much, I was amazed how much thicker and heavier the Chubby stuff was comapred to the stock pieces.

You may need a bit more than 6" (that's what she said) to actually be leaning back. Compared to the stock setup it feels like I'm laid back but my back is pretty much straight. It may also depend on how your built too. I'm tall but only have a 33" inseam, I'm all back and arms like a gorilla so it's an easy reach. A shorter arm may require a bit more pull back to be comfortable.

i'm short, so u prolly can't compare. puts myself in a great position. i can do 350+ miles of backroads in a day w/o a prob. imho w/o the tank lift the 8" rise on the bars looks outta place...
Take a look at the Burly Drag bars. I was looking into these when I was still deciding what to do and I liked the dimensions of their 7" T bar in 1 1/4" http://www.burlybrand.com/dragbars/standard.html
I saw a pic of those bars on a FXST somewhere on this board and thought they looked real good.
