So I did the broomstick trick, by having the wife hold a tape measure up and away from me. Three times in a row I held the bar up to 14ź inches.
So I'm thinking 12 inch bars with 2 inch risers will do the trick, or should I get 14s with 1 inch risers. I prefer the low risers because I just think they look better. My concern is that I will be too high with 16s.

I'm having to shorten the riser mounting bolts that came with this Arlen Ness flush mounted bushing kit. They bottom out against the risers.

You can always add a taller riser if you're not satisfied with the height. Either the 1.25 or 1.5 inch diameter ones. Most bar manufacturers make a stepped down bar in the riser area if you want to use the stock risers, at least in the 1.25 inch bars anyway.
I did alot of research on this same question. I finally pulled the trigger on a set of 14" Carlini Gangsters. They are pricey, but worth every penny once I got mounted them on the bike. I really like the bend on them. I bought a set of blems, saved some coin and I can find anything wrong with them?? Must be a very slight blem. these on on my 07' FXSTC.
Mack, I have a brand new set of Burly 14" apes here in my personal collection for sale for $120 shipped. As far as height, I can't help you as we are all different. I run 16" Carlini's and am not tall, but that is jsut me.
