I'd do the 204's.

+1 on the 204 for your riding style.

204's. Check into decking the heads to increase compression some. Cheap, ~$75 for both heads. Depending on mileage, reuse the stock push rods to save some money. Lifters may need replacing. Inner cam bearings for sure.

the 253 will be soft in the lower-mid rpm's with the 53 IC. If U ride above 3500 rpms all the time U might like them be better.

I will add the Son had 2 softtails with the 204's and loved them and of the two, they would be my pick.

When I did my 95 build, I had the heads decked and cc'd only, to match the cam, cost $100. I was doing a budget build. In hindsight, I should have waited just a lil bit longer and saved another $300 to get the bigboyz street port. Patience can be a virtue when doing these builds if budget is part of the equation. Also, like Kuma said, r&r inner cam bearings to Timken B148's, install Baisley spring in cam plate, check tensioners for wear. I used a Cometic .030 head gasket.
