Your sled looks good. There are somethings I would change but thats just me. We all have different tastes and styles. I like the Nastalgic look my self. Build it the way you like it and ride it. Good luck on your decicion.
I would not waste the time, effort or money on switching from 39's to 36's .You will not even notice the difference.
Here is a thought on the WW .Since you have new tires and wheels You can just send Tab (DB Tires) Your current tires and have him add the WW to them. That should run less than 2 Bills. Last time I checked I thought Tab said 75.00 per tire to add WW. Little extra labor for you and down time with the bike. But may be an option.
The new bars ,A/C and WW would pull it all together with out the expense of new paint IMHO.

JMHO, I wouldnt go with the Flyin apes, Id do the Gangster apes, they flow more with the front end, but its your Money brother.
