I have a 2000 Softtail that I recently had the 95CI upgrade done on back in March. I checked my oil the other day and found that it wasn't even registering on the dipstick. It took about 3 quarts to fill it. There are no leaks or signs of leaks on the bike. Are Harley's known for burning oil? I haven't noticed any smoking.
If you don't see leaks on the ground, or have a blue stream coming from your exhaust the odds are your bike is "SUMPING".
There's is a check valve on the oil system and if that hangs up the oil stays in the engine bottom. Driving while having this condition is bad for your motor and you. The motor is under a huge strain with the oil filling the bottom end of the motor. And it pukes it out of every opening.
Always check your oil with the bike hot and level. The user manual will tell you that the top mark of the dipstick is overfilled. Keep the oil closer to the bottom mark.
Check your plugs. See if there is a lot of carbon build up in the cylinders/on the plugs. Now that you know you are loosing oil, keep watching it to see just how much you are loosing. My 05 was loosing a quart every 1k through the valve seals. Exhaust looked normal, but inside of the cylinders/exhausts were caked with carbon.
