My understanding of a "club" bike is one that is inconspicuous to the police so they can not tell your harley apart from a crowd of harleys.

So they look stock and maybe sound stock (quiet) but have a ton of money in the motor to get away from the cops.

You know the police have radios now....those puppies are really fast

Although I do have a good story related to that topic:

Back in 1972, I sold an absolutely mint condition 1970 Norton Commando "Roadster" to a BIG BURLY real life Hell's Angels member, who came to view the bike with 3 of his fellow club members, left a deposit, and then came the next evening with about a DOZEN of his fellow club members, and counted out the entire purchase price in CASH ito my hands, collected the title, and rode off happily into the night with his buddies (waking up the entire neighborhood), on his 450 lb small sized Norton. Nicest bike transaction I have ever done. Does that make my absolutely stock 1970 Norton Commando Roadster a "motorcycle club" stye bike?

That is another, more common name for them, yes.

The club racer name was applied more to the bikes owned by guys that both did the pub crawls but also were members of motorcycle race clubs that actually sometimes raced on weekends.
