Will you be starting IN Sedona? Or getting there at 9 am from which direction??
Oak Creek Canyon is a must see/ride... but that will be slow escaping Sedona, due to all the car traffic trying to park on the sides and get to campgrounds and such... but once you get past that it is beautiful... with a fabulous look-out at the top from which you can see the road you have just ridden. (Park and walk all the way to the end for this view!!)
There are also various places to stop and view and photograph the Red Rock formations, but you need to get a permit to park... it's only about $5, I think.
You may want to see the Chapel in the Rocks, which is a church they built right into the side of one of the rock formations! I think it is beautiful... you can ride right up to it, and can usually go in if you are that interested, or you should at least ride by it so you can see it from afar.
Another place is Red Rock State Park...more, get off the bike stuff, I think... but if you only have one day to see Sedona, you might as well SEE Sedona!

Otherwise, be prepared for a lot of tourist traffic in town, and bring your patience. You can still see a lot in one day, as Sedona is not that big.
Yes, the best part IMHO will be 89A either direction between Sedona and Flagstaff. Also check out Schnebly Hill Rd. it's blacktop the first few miles and there's a beautiful overlook back to the west over town just as the BT ends. Great views from Airport Rd. also but crowded at sundown.
Think about riding 89A both directions so you can look at what you were trying to see over your shoulder as you went the other direction.
Matt included Lake Mary Rd... which is an absolutely beautiful ride...that is at very high elevation, so expect to need a jacket, no matter what time of year you are here.

If you want to add another couple hours to the ride, take 89 south out of Prescott down to Congress make a U-turn and run back up Yarnell Hill and back into Prescott.
Did a big portion of that ride yesterday (for the 50th or so time) Phx to Wickenburg, Prescott, Jerome, Sedona, Lake Mary, Strawberry, Camp Verde and back to Phoenix. Sedona was packed even for a Monday.
