I'm putting a set of air shocks on later today, and plan on running one valve per shock. No lines that can leak.
When running two separate valves its best to check air pressure with either the bike standing straight up or on a lift to get equal pressure. Big metrics have run individual shraeder valves for years

one valve per shock

as guzzi says as well

less things to break - less things to maintain - and imo it looks cleaner without the tubes sticking out . but thats just me

Unjust picked up a new set of chrome Dennis Kirk V shocks that have plugs.
Does anyone know what size schader to use? The plugs are very fine thread and the kid at Napa auto parts wasn't sure of the thread pitch.

I am running the dual lines one fill set up that came with the shocks. No problem and easier to fill equally. I have them on since April. They never leaked on my Road King as long as connected correctly they should not leak. However my shocks came with them when I bought them. I probably would have run separately if they were not included.

Both of my nightsters have the lines and no troubles with them leaking or having lines sticking out all over the place...one service point that you can't even see, but access very easy to adjust the psi.
