You started off wanting to fit a rack. How are you going to attach it?

Do you ride with a pillion? There is a detachable rack that sits across the mudguard. You would need a solo seat.

I see now two options:
1) Detachable side plates and rack, both are known parts. And some very low upright just for complete look.
2) Thing like you are showing, but configured for pillion. I will search for this further.

Well, after ride with my wife, she asked me to buy a backrest. So i ordered an assembly of mid-low backrest with luggage rack, pad, side plates and latches.
She says that on previous bike with front-inclined seat it was not needed, but with Harley's backward inclined pillion she requires a backrest.

To answer your question regarding the detachable setup yes they are secure enough. I have a tour pak mounted using them on my 2007 Sportster and a similar backrest with luggage rack on my Softail

Do these sideplates, luggage racks and other stuff comes with Torx or Hex socket (SAE or Metric) screws? Probably I will have to order some more new tools

If you purchase HD parts you will get everything you need. The fittings are SAE as that is what I have on my SuperLow. I have a slightly different setup as I have saddlebags that use the same mounting point. The bolts on mine are round the other way and longer so a nut can screw on them inside the bags.

Pretty sure those rack bolts are 1/4-20 thread. So you can use whatever bolt suits your fancy.
You can also buy just a detachable side plates, from ebay and make your own flat rack for when riding solo.

Could it possibly store one or even two FF helmets?

Well, it is captioned as HD, but I can admit it may be a copy by some other manufacturer, because price is lower than price on official HD website. All fasteners included, they are Hex socket bolts for Allen key.
It seems that seller has muddled up and put standard upright 52300018 instead of low 52300022.
Btw, upright is heavy, it is done from solid steel bar, I'd expect tubular part.

Several years ago i bought GIVI on-top luggage rack for their 52L topcase. Although it was branded, it was heavy as hell (solid steel bars, again), and even finish was poor.
I brought it to one skillful lad, asked to do "like this, but better, you know how", and he did the same, but tubular, almost twice lighter, and very good-looking.

Its solid because you wouldn't want tubing supporting the full weight of a rider leaning against it. That takes a lot of pressure.

Stress distribution through the beam's cross section during bending makes inner material almost useless for strength... But that excessive material likely helps to damp vibration of beam. Shivering backrest would be not comfortable also. Aerospace education does not allow me to admit heavy designs
