It could be to do with the fact that your Iron has a 1200cc big bore kit and the stock 883 gearing, the 883 and 1200 have different gear ratios as below.
Both 883 and 1200 Sportsters from 2011 - and later use the same final drive gearing, 29T engine pulley and 68T wheel pulley. The overall final drive gear ratio is 2.35.

Yes, it's a balance between engaging the clutch and engine RPM. You are using the friction zone to apply controlled power. Go to a flat and level parking lot and try engaging the clutch slowly at idle. With a 1200 motor, you can actually engage the clutch and move ahead without even using the throttle, once you get comfortable with using the "friction zone." I barely need to give my 1250 throttle to get rolling.
