As you may know or not know my bike (09 iron) is a auction rebuild project, so no manuals/paperwork etc.
When you kill the engine, alarm activates there is a little red flashing key symbol on the speedo, I know what it is but wonder can you turn it off so not to drain the battery?

They only way I know to disable it would to disable the security system. You can do this by entering in the code (which is difficult since you don't know what it would be) every time you finish a ride.
Do you have a dealership nearby or know which one it was sold from?
That light is an LED, it draws only a minuscule amount of power. Your battery will discharge itself from just sitting, far faster than an LED can drain it. If the bike is going to sit for more than a few days, it should be on a Battery Tender anyway.

.
Mmmm I live in a second store flat with no means of setting up a battery tender :0( bike could sit for up to three weeks without being used as it's for pleasure not work,
Just got my new (secondhand stock) speedo wired up and battery died with in four days,
Ok bike has been stored for months at auction house and for 4 months at my place so I'm guessing battery has had it but had this problem with my vstar, red flashy light would kill the battery.
All you would be able to do is disconnect the battery. There will be a small drain on the battery no mater what you do. But then again, your alarm won't work. And if you have the smart siren installed, you will need to remove the battery back-up in the siren too.
Find the instructions on disabling your alarm, and try the default code. Chances are it was never changed. I've seen the instructions posted in here a number of times, but I'm too lazy to do the search for you right now.
