Carb Weirdness...?
Turns out the mixture screw is already wound all the way in?!?! Tried to wind out two turns and fuel was pissing everywhere!
No I know she really needs re-jetting (which i am getting done next week now) but this sounds weird....like the needle float fecked???
What do you dudes think?
Possibly the previous owner tried to solve one of the above problems by closing off the mixture screw.

No idea what jets are in the carb now!?
What do you mean by "the needle moved in the slide" ?

I'm thinking the needle may be down a notch or two, and the bike is running on the mainjet flow only. Lowering the "c" ring would raise the needle and expose the mainjet circuit.
That would explain the idle screw being bottomed out, your idle circuit may be circumvented by the mainjet. Your idle is only controlled by the idle speed screw now, where your throttle cables meet the carb.
I remember my old dirtbike carb worked on the slide only, and maybe whoever set up the carb figured it was like a dirtbike carb. Idle was controlled by a screw that limited how far the slide went down, not like our CV carbs.

The main diaphram looks good and so do other seals, although I have purchased a rebuild kit anyway. It's 10yrs old after all! I also purchased a 170 main jet to go with it as that seems to be the consensus for stage 1.
Here's the interesting part though....
A: She already has a 180 main jet in?
B: It appears someone has added some washers to the clip at the top of the needle. Isn't this what you do when you use those carbs on a bike like a Suzuki Samurai?
What is the stock positon for that clip, or the best for stage 1?

Maybe someone put in a Dynojet carb kit and messed up? You can find the dynojet instructions online, that should reference the original position of the needle (i.e which notch) in the vacuum slide. Make sure the needle is installed properly, I think a recent post mentioned getting in positioned incorrectly in the slide during rebuild.
I forget if my service manual goes into that much detail, hopefully someone else has more exact knowledge. I did my dynojet kit over 20 years ago and lost all the instructions long ago.
Sounds like you are on the right track.

How could the needle be positioned incorrectly? It just goes in a hole doesn't it??
Have been doing some Google'ing, defo seems like my needle is from a DynoJet kit, having trouble finding the instructions though...
