Bought a 883l with an 5.0 gallon aftermarket tank. Problem is it still has the original petcock so it sits too high in the tank. I can only get about 2.5-3 gallons out of it (including reserve) until it dies. Any ideas how to shorten the petcock or if there is an aftermarket one that would fix the problem? Stopping for gas daily really sucks!
Buy the correct size petcock and replace otherwise prepare yoursself for more of the same. Just google the size/type of petcock you need for a 5 gallon cruiser tank. You said aftermarket tank, who sells it and i would go from there.

The height of the stock petcock is adjustable, have you tried that?
Something doesn't compute! It doesn't make sense that the tank doesn't empty. The petcock shouldn't make any difference, as the stock tank it came out of will drain through it, as your current tank should as well. Show us a photo of the side of the tank, so we can see the petcock.

As charley said, they are adjustable. How far you run the threaded part into the tank before tightening the lock down nut makes a big difference..........
Dont know the manufacture of the tank, came that way when I bought it. Did drain it out completely and filled it up with 4.9 gals. The reason it sits higher in the tank is because this tank is much thinner than the stock peanut tank. Heres a side pic.

It does not need to be run all the way in the tank.................
