Always jeans (usually Kevlar jeans), boots, and Mechanix gloves. Ive gone the route of a wicking shirt under a regular shirt, but I haven't really found I need it. If you're sitting in traffic, that's a different story, though.
I use the HD water vest for rides to Vegas or through the desert. Usually wear the mesh HD jacket with the body armor over the water vest. But in general, just a t-shirt works nicely here when riding up/down PCH through the beach cities. When riding up into the mountains, either the t-shirt or maybe my mesh HD jacket.
I work on a military base so I need to long sleeves, gloves, etc. I have a mesh jacket which works pretty well. As long as I can stay moving I'm good. When I'm just riding for pleasure I'll wear a jeans and t-shirt.
