Pull Behind Trailer single wheel vs two wheels?

People who warn you of a fiery death from pulling a trailer simply have never pulled one. There's really nothing to it if you use your head.

That guy pulled in and out of the lot in red lodge Montana with such ease not scraping wobbling of the trailer that I thought if I ever decided to get one it would be a single rear wheel model.
Don't know the brand. I would love to have a tent model but those days are behind me also.
If a rider wants to carry a passenger they add a sissy bar comfy rear seat, and rear pegs.
If they want to carry more stuff they get a bike with saddlebags. Bigger bags hold more stuff.
If still not enough they add the size tour pak to hold the amount of stuff they require.
If not enough (like going camping) they hook on a trailer of a size sufficient to carry their stuff.
If even more people or stuff is needed (even a dog) a side car is till an option.
The more people and stuff they carry, the more loaded down the bike becomes and perhaps less performance.
Everybody gets to decide for themselves their balance on stuff vs drivability. If carrying more stuff bugs you, then just take less stuff. If you need to carry more stuff, then suck it up and deal with the additional weight.
Hope everybody ends up with just the right amount of stuff that makes them happy.
Hope I did not sound too much like George Carlin here.
Worry more about your own stuff, and less about other people's stuff.

The Best of Harley-Davidson for Lifelong Riders
I have been riding for over 4 decades, about 10 years ago started pulling trailers regularly because the wife wanted more creature comforts when camping.
I have a cargo trailer and a pop up tent trailer.
I have not seen a single wheel trailer that will pull all the stuff she "needs" to take camping.

Also, I use the cargo trailer sometimes when going to pick up something, again size matters. lol
Except for a little slower acceleration, taking a bit longer to slow down, and remembering you are longer when changing lanes, as far as handling I don't even feel it is back there.
One thing I have always had, and would recommend regardless of trailer, is a swivel hitch like pictured below.

I haven't gotten a trailer, but giving it consideration. From what I can tell, ya can't go wrong with Bushtec except for the price.
