Fort Lee might be a bit of a drive for you to MCC SW, but might be worth it and get that Sundowner just right. Can cost you some on the shipping on a few back and forth to MCC.

I called MCC yesterday and got in on Jan 23. It just needs to be there by the 22nd. Not bad, 3 weeks to wait for hopefully a lot better seat. She was great to talk with. I'm personally going with the double decker memory foam mod, tail bone relief panel, down and back 1", and shape the sides. Give them a try.
That's is what I did, but don't remember talking about shaving the sides. I'm 6-2 so height of seat is not a problem.

That might be a good excuse for me to put some more miles on the bike. Then I can ride it all the way back and see how I really like the seat.
