Doesn'tthe 01 modelhave carburetors rather than EFI? If so, then know that remaps and fuel tuners only apply to the newer Fuel Injected bikes whereby carburetors need rejetting on the non EFI bikes. Do a search on rejetting as there are a lot of how to threads within this site.
Most download maps from HD are configured by the MOCO for their in house brands and parts like the Screamin Eagle line. The maps willoften pop or fartwith hardware that is outside of a maps intended product group. You would be much better off with a PCIII where you can load a preconfigured maps for your setup and or have a tuner set it up on a dyno so that it's dialed in right. It's likely popping on decel due to a rich spot where fuel needs to be subtracted from the mapping.
If you don'tmind spending the money and want to add further upgrades down the road, then opt for the higher end tuners from T/Max or DTT as noted above. They will allow you to dial it in without a dyno run, and also allow future upgrades since you can tune it yourself and don't require a dyno to see the results.
Glideman, thanks for your help here, one more question. I spoke with the original owner. He tells me that the dealer did a remap. If I want to adda PCIII, will I need to haveit remappedback to stock configuration before installing it?
I have a new '07 Ultra Glide. I just installed the Stage 1 kit and will be installing a V&H Fuel Pack and Porker Performance slip on mufflers. I have a question about the Stage 1. When I removed the original filter housing and took off the black back plate, there is a wire with what looks like a sensor that was attached to the back of the original back plate. Where would you put this now that the Stage 1 intake is on the bike? Is there a specific location for it or should I just secure it to keep it from flapping in the wind?

I think the wire is for the active intake not used in the usa, but used on hdi models. cheaper to make one harness.
