First off, I don't ride an Ultra but a RG as you can see from my pic below. My bike didn't come with a CB, so I added one as soon as I could. I thought about the HD add-on, but it was pricey, and besides, I had a leftover J&M unit from my previous ride. It's great for a couple reasons. First, I enjoy having the capabilities to use the CB whenever I'm riding with a group. During SCRC chapter rides, it's nice to know what is coming up, or what the ride leader may need when tailing for the group. Second, I use it often when riding alone to determine road conditions and such.
While I'm ashamed to admit it, I use the J&M unit as an aux input for my iPod or XM through my headset. I use an EdSet headset with different ear speakers for which I used a set of Sony speakers velcro'd inside my Sy-Max helmet. The quality of the sound is great! On occasions when I'm not doing any distance riding or for local rides, I just wear a regular HJC full-face helmet and listen to the HD radio through my Hog-Tunes. But when I'm touring, I've definitely got my Sy-Max on with high fidelity tunes surrounding my big ol' ugly mug.
I know you're considering an Ultra, and rightfully so cause I bet it's a great ride. Don't forget to include the Road Glide on your shopping list. It ranks in price close to the EG Standard (I think?) and comes with the same radio and includes cruise. I added a tour pak with the Ultra antenna setup and love the looks of my bike.
When riding in groups we use them a lot. the lead and tail gunner have good communications via the CB and it makes it easier for the group to keep things together. I recommend it if you ride much on trips with other couples.
If you like the looks of the standard better but think you might use the tour pak very often then why not buy the Ultra and also some quick de-tach for the tour pak.I don't use my cb at all but the intercom is invaluable when riding 2-up.Also gives me a reason to wear the helmet as the radio blocks just about all of the wind noise as it passes my ears.
