The "stop" sound you're looking for is the butterfly in the throttle body closing all the way shut. If it doesn't do that it will always feel "mushy".
The reason it feels mushy is because you have the pull cable working against the return cable while the butterfly never closes completely.
I adjust mine so the pull cable opens completely while also closing with an audible sound. Then I adjust the return cable to remove all of the slack in the return cable.
I prefer to have a minimum amount of free play in the cables.
