+1, also use anti-seize on the derby & primary cover bolts and never struggle again.

As others said, just drill the head off. It is surprisingly easy and only take a few seconds. I did this at the beginning of the season. At first I was worried abut drilling to quick and deep that I would screw up the derby cover, but you will hit the washer first, so no worries.

I would suggest putting in a couple of the other screws just to hold the derby cover so when you drill through the head the derby cover is supported and your not trying to catch it as it falling to the ground. Once I drilled mine the rest of the bolt came out easily by hand, but if lock tight was used you might need to use a pair of vise grips to remove it.

Write down the correct size of the torx wrench in your maintenance manual for future reference.

Throw the Torx bolts away.

Get allen-head button-head bolts.

DON'T use a torque wrench on these, EVER!

Put anti-seize on them, and use a small L-shaped allen wrench to tighten them up. Your hand will tell you, "tight enough" ...

To those that say throw away the Torx and go Allen, Stop drinking the koolaid. Allens will round off 10x easier and more often than a Torx.
Hell people keep and reuse allen wrenches that came with their laundry cart. About as cheap as you can get. Dont believe everything you hear on the net.
Ask any GOOD machinists, I bet 9 out of 10 will choose Torx.
And yes I totally forgot to use neverseeze no matter what type head you use. Ipersonally use grade 8 stainless bolts with never seeze or blue locktite depending on the application on the bike.

And I totally agree,the torx are better than Allens.Use the right size tool. I've had many Allens rounded out over the years,and not just on bikes.

Rather unclear for me so i will guess that all T-27 TORX bolts on a Derby cover were rather tight.
One TORX bolt got a rounded head.
You are now trying to remove that one TORX bolt on the Derby cover.
Consider re-install of bolts in the other holes in order to release pressure on the plate near the one rounded bolt.
Apply heat with soldering iron to the one bolt.
Use correct TORX bit.
If the bolt is really bad try using something like a flat head bit.
Drilling is also an option

Tip, always removed the cover before draining the oil, if you striped a bolt head you can still used the bike.
Use the right size 27mm torx appling press to the bolt and turn using a slow constant pressure to the wrench.

Torx Vs Allen. Reminds me of theory Vs practical application. In theory practical application and theory are the same. In practical application they are not! Reality is while on paper Torx are better but in aplication the HD Torx head has too shallow of a surface area to be better than an Allen head and if you round off an Allen head in this application you should just weld your toolbox shut!
