I would ride down to Baytown and talk to Wolfgang. He won't steer you wrong. He is an amazing builder, and a standup guy, and very close to home for you.
I've never been to his shop but I have heard very good things about Wolfgang as well from people that have used him.
I thought the same thing about my mileage drop but for the boost in performance your looking at about 25 miles, give or take, less per tank. Touring that's not really a big deal. Especially since my wife wants to stop before then to stretch her legs. Where it gets me is I used to make three full trips back and forth to work on a tank. Now it's 2 1/2 trips. But then I ride the Road King to commute so again, no big deal but I totally understand your thought process.
Danny can lean it out if you ask him too but you loose some of the get up and go.

Talked to Wolfgang today, as I had totally forget he was down there. His suggestion, 551 cams and everything else Danny suggested. He also suggested keeping my Power Vision and tuning with that, his words no sense in losing/wasting the $$$$. Same also on my current exhaust system, which I had planned to swap before hand. I'm going to revisit the cams. The factory HD cams have a 511 lift on them and I don't feel like the S&S 510's will give me anything added. It's interesting how 2 tuners/builders can have the save answers to many questions but suggest 2 totally different cam setups.
Exhaust wise, I'm leaning to a Fullsac header with possibly doing come Crusher mufflers or even the Fullsac mufflers. Again, I no expert at all and don't see what reworking the factory header will do, other than saving a few $$$$.
Reworking the factory header will remove the catalytic converter.
Yes....I kept my factory header and have already removed the cat from it. The 1 shop say they take your factory header and do a rework and put their collector design into it and then reuse. I guess effectively that is close to the same thing that you get aftermarket.

Wow, if you can get a picture of one I'd love to see it.

There a ton of cams out there. You can go crazy researching and talking to people about cams. They all have their own opinion. I have S&S in one bike and SE's in the other. It's all about your riding style and where you want the cam to kick in. Do you want early torque or later horse power? What's the phrase? Torque gets you off the line, horsepower gets you across it. Each builder is going to suggest the cam they like and get good results tuning. Nothing wrong with the power vision and it will give you the option to tweak the tune yourself if you wanted but going straight to the ecm takes the powervision out and to me, one less thing to fail. Of course if it did, you can take it off and although the bike might run like crap, it would still get you home. I'm no expert either but if they both say they get good results with the stock header, why buy a new one? Especially if it only adds a few numbers that your butt dyno would never feel the difference.
Either builder is going to make their suggestions on what they like or have had success with, but in the end, I'm sure they will both put in any cam or exhaust you ask for and then tune it right.

There is no single answer to any tuning question! That's what makes answering questions such as 'which is best' impossible. Far better to select a tuning shop, talk through what you are after and stick with their recommendations.

I'll definitely be able to get a pick of 1. I'm going to give 1 a try on my bike. Plan is to drop it off the Tuesday after the Lone Star Rally. So when it's all done, I'll post picks of the header as well as the dyno sheets.
