I used a Canon Powershot SD450 last year on a cross USA trip from Los Angeles to Virginia. Took great pictures, (even some video coming down the back side of Tioga Pass at Yosemite). It is small enough to put in my vest pocket or windshield bag. A 2G SD card holds load of pictures too. I believe you can get these cameras now for a little over $200.

Check out the Nikon L11 Great features for under $150.

Or, if you have a passenger that will be taking pics while riding check the Nikon L12 with image stabilization for $199 or less.

My sig pic was taken with a Nikon D80....

Depending on what you are looking to spend, you can get one heck of an entry level dslr for just over $500. The Nikon D40 is an outstanding camera and comes with an incredibly good lens for the price. Follow this link for a review:

Time you invest in a decent Digital Slr....Nikon D40/50 D70/80
They take such beautiful pictures you would be amazed!
I have the D70....
They are kind of pricey though...

I carry a Fuji digital with extra memory cards and a Pentax 35mm. both fit in your hand and produce great pictures.
