Well currently the low pro seat on HD is on backorder. I was all in on the Road Sofa at one point, but being short, I feel like it might move me too high. I have thought about also lowering the rear suspension in order to fix that since most decent seats seem to raise you up. I know my friends standard 2017 Road kings seat sat me much lower (was the stock touring style seat), so I didn't know if they base the seat height off that or the one that came on the special.
Look for a Road King CVO seat. I have one on my bike. Its 2 piece and looks real good. Pretty damn comfortable too. And it sits about an 1" or so lower. I am the same height as you and loved when I put that on because it moved me a little further back and didn't put me so wide legged if you know what I mean.
Finally got around to washing the scoot and applying the first coat of ceramic detailer. Had to put her away before a windstorm yesterday so I'll get some better pics today. Rode up to Post Falls, ID and back this weekend for the Drag Races at Stateline Raceway. Bike ran great - almost 2500 miles on it now.
Just picked this up at the end of the week. Fresh from paint, this is a 2021 RKS in Gunship Grey. Color turned out great and I'm loving this bike! Can't wait for the break in period to be finished.
Question: Does anyone have experience with the Sundowner seat? Is it much better than the Low Profile seat? Stuck trying to decide which to buy, I need it especially to be better for the passenger.

If by Low Profile you mean the stock seat, then any seat that has a flat, wide pillion will be a major improvement.
The stock seat narrows and slopes backwards, which makes it uncomfortable for the two-up.
