I think there is quite a bit you can do to an Ultra...but that's just my opinion! I don't know that I buy the crosswind issue, but handling is something you need to decide personally. Both are excellent choices, and most of us are biased on the model we have or love.....
I was a hardcore old school batwing fairing guy until I saw the ad for the 2000 Screamin Eagle Roadglide. Liked the look so much I just had to try it. I will probably never go back. Don't get me wrong. I love the look of the old style fairing and loved all the ones I had, but out of 11 harleys this is by far my favorite. 95 cu in is much better than stock. 103 has to be better!!!
I have an 03 roadglide and flat out love it. other bikes I have had never handled near as well. they are great customizers. as for wind buffeting. I wil say they are better that you think. in 04 the fairing and windshieslwas modified to reduce buffetting. Take them both for a test ride and see what you think.
If I were to trade in my Road King I would purchase a Road Glide. I've always been a traditional guy and like the looks of the Electra but the RG has been growing on me. I heard it called the ole man's crotch rocket, LOL. Go with your instincts, you will not reget it.

I ran about 300 miles on a friend's RG...sweet! Then I ran about the same on an Ultra...I saw no difference (but the vented lowers was a real plus on the FLHTCUI!!!)
Buffeting did not seem any different (and barely present, really...speeds of 75 - 85 on both scoots and an occasional wind balst by trucks).
I opted for the Ultra...just too many goodies to pass up.
Very timely question - Yesterday I did demo rides on an Ultra and a Road Glide at my local dealer. For me I love the handling and the fairing of the Road Glide hands down. I experienced wind buffeting on my legs on the Ultra, but none at all on the RG. The Road Glide just made me wanna pack my bags and hit the road!
