The only action I would take with the phone as far as the gopro goes is to start and stop recording.
As far as leaving in gear while at stops, it's unnecessary wear on your throw out bearing. After the traffic behind me comes to a stop, I'm in neutral and using the front brake.
And as far as being distracted by the phone, any of you who have a tourer can get way more distracted by having the stereo on and or messing with your Boom system. Next thing you're gonna tell me is that you never mess with your Boom system while moving. It might have hand controls, but you're still going to look down at the screen.
Don't get me wrong, I think distracted driving is dangerous whether you're on 4 or 2 wheels.

Mine is on the clutch side. Just a little easier to view and mainly because it’s out of the way of the oil pressure gauge on my old style gauge layout.
Only thing i ever ever do is skip ahead on the music I’m listening to. If I get a call or txt that requires answering I’ll get off the road and handle it. The visibility of the phone is a request of my wife’s since we have young kids etc. she needs to be able to get ahold of me. Works well that way.
Obviously the gopro cannot be controlled by SIRI? Or can it? I can use SERI hands free with voice commands to send and read text messages, navigate, find addresses, you name it. Maybe the app on the iphone can be run by SERI, maybe not. If so do like I do, keep phone in your pocket.

I'm not sure if the GoPro app developers have gotten around to adding Siri to control GoPro yet. Apple now let's Siri control third party apps. Would be a nice to have, although Siri might reply back something like "I'm sorry, but I can't hear you over your dang loud pipes!".
With the new ‘Shortcuts’ introduced in iOS 13, Siri can now control damn near anything. You can setup a shortcut and corresponding voice command. Then give Siri that command and Siri will execute that shortcut.
Correct me if I'm wrong, but don't you have to take your hands off the bars and touch your phone to activate siri?
If I have the gopro app running, all I have to do is push the record button.
