There was a time when Harley dealers had a 'fit centre' or something similar, where you could compare bars on a mule bike. If they still do that you may be able to try out some H-D accessory bars for size?
They still do that at every HD dealership . Well any that I have been in anyway. It's free and you can try on as many bars as you like. Kind of takes the guessing out.

Raising bars can make a huge difference in control and comfort. I added some taller bars on the CVO Limited and it was a great improvement. Used KST 10-inch bars, and I am 6' 3" tall. No problem riding all day long, and the bars feel like they are where they need to be.
Use some thickish wire, so it doesn't bend easily, and mock up some of the handlebars to find the sort of rise, width, etc that you're looking for. Once you've got an idea of what seems comfortable, look for bars that match up with what you mocked up. It'll take a little time this way, but it helps guide you in.
You can even do some further experimenting with PVC piping and the like, zip tying to your existing bars but having handlebar ends in the new position to test while out riding. You'll look a little bizzare, and it isn't very strong, but it helps you get a little riding time in the new positions to find what seems nice to you.
And if you're willing to spend some serious coin, you can buy adjustable handlebars.
Take a lool at the Khrome Werks bars. I went with these because they are almost identical to the stock bar bends and angles. Very comfy and believe me, I did a sheet ton of research, went to dealers and tried the real thing. Many dealer stock used bikes have had the bars changed by the original owner. Khrome Werks has two models of this bar, one has a straighter angle on the grips, the other model is curved down like stock.
