The map you provided is far from linear. In fact it lags and has a big jump in the lower right quadrant. Most of the time when tuners customize it, they provide more opening at the lower %. If you have acres to modifying the map Id try making it completely linear, and then see what happens.
That is a smart move... unless you understand what you are doing, I wouldn't adjust those tables on your own...
Just for your reference, here is the 2nd page of a tutorial I saved about adjusting those tables... as you can see, this is for a twin cam, and the numbers are very different than you showed in your first post... that could be the difference between the twin cams and M8 engines, or mods, or ???....
The point is.... that if you don't adjust those numbers properly, there's a good chance you'll just make it worse...

Additionally.... the tutorial claims that a "twitchy" throttle is caused by a one to one throttle blade control table... your table was not one to one, like the second table on this page... maybe it's close enough to cause your issue... or maybe not..
