Shocks adjustment
I have the 12" Ohlins on my King. I'm like Tim Conway's Dorf and I can reach the ground and they ride like silk. I have Progressive monotubes up front now, and looking to get Ohlins up front as a winter project.

on my previous bike (99 Road King) I installed the Bitubo Twin adjustable 13” shocks, and at the same time, had the Progressive mono tube cartridges installed in the front end - that bike rode like it was on rails……better than a brand new bike!
for those challenged in inseam/leg length, I do support going with quality 12” shocks, but, if at all possible, IF going with a 13” shock, and it’s near regular seat height allows a rider to “comfortably” flat foot the bike, then my advice would be to go with the 13” shock option…..
I am currently biding my time for my front fork updates on my current bike - waiting to take the $1500-$2000 bill, for fork inserts, chrome front end, and possibly handlebars and riser bushings, all together…..

Similar weights for the wife and I that you mentioned in your OP (maybe a bit less) but loaded down with bags, or even just a 200 mile day ride, very similar I would say, on average.
We tried every adjustment there was on that POS stock shock. She is a bigger fan of my Ohlins than I am!
You will not regret great shocks after the initial pain of handing over the cash.
