After going through a couple of Amazon wannabes, I settled on a Freedom shield and haven't looked back. When I got mine, they had an eBay blemish site that they sell for a good discount. My blem was a small smudge near the bottom of the shield that didn't affect me at all, so it was a good buy for me. They also have a great return policy where you can try out the shield and if it doesn't work for you, you can return it for another size/style as long as you don't take the protective plastic off.
The ideal height is where the top edge of the windshield is level with the tip of your nose. This gives you about 2 to see over the top of the windshield when you are looking straight ahead. With this height, the wind will clear the top of your head for a comfortable and quiet ride. The taller you go the better it feels, especially for the passenger, as long as the top edge doesnt creep up into your line of sight.

If you have a tall windshield on your bike, you can place a piece of Blue Painters Masking Tape on your windshield with the top edge of the tape at different heights and take a short ride to get settled into your normal riding position.

The seat has a huge impact on the wind too. The seat can move you forward or back and up and down. My seat moved me back, so a 9" shield for me at 6'0" is great, and it looks sexy. The recurve at the top make a huge difference too.
I have found with thick, tall touring seats, the wind gets me more and I needed a taller shield to compensate. Also, the wind hitting you in the face can be uncomfortable, but going straight over your head can cause a negative pressure and that tends to hurt my back without a backrest. So, the recurve and the wind hitting just the top of my head so it flows over has been the best I have found.
