One factor to consider is, what actual bars are you planning to run. Some bar makers provide different measurements by listing the "riser" height not the end grip height. Some 14s are a 14" rise and the grips are another 1" or so on top, meaning your hands would sit at 15" total height. This is more of an occurrence in T-bar style handlebars but I have seen ape style bars referenced differently too. Just sit on the bike as you would ride and throw your hands up where you want the grips to be, have someone take a pic and compare that to online or the chart already posted. this would give you the best ballpark estimate
I just did my bars on my 08 ultra. Pulled my own wires. It is a pain in the butt to say the least. I can't imagine people doing the Bull horn handlebars. Nope. Never again. I would have to say make sure you get bars that are already wired.

I had 16" burleigh bagger bars on my old 2014 FLHTK and I found them to be just a tad too high. I am about 186cm tall (not sure what that is in feet/inches). This time I'm going to get 14 inchers on my 2020 FLHTK which I think will be just right (haven't got them yet - am saving up).

Well no wonder they were too tall. Your bars are measured in inches and your height in centimeters!
Use some PVC and mock up a set. Check out my thread at post #5 for a pic of what I am talking about.
I cut various lengths for the uprights and swapped them out till I found what I wanted. Then measured the distance from the stock grip to my pvc "grip". Then I went shopping.
I too am about your size, 6 feet tall, I have 32-33" inseam and long torso and arms. I have a '21 Ultra Limited CVO and it has a La Pera Maverick seat that moves me down and back a bit. I put on Factory 47 Assault bars, 14-inch height, and they are just right for me. I had considered 12-inch but as I was sitting on a SG at the dealership equipped with 12-inchers, one of the old head employees there looked at me and told me I should do 14s. The only drawback is cold weather because your hands aren't covered by the fairing.
