I'm currently making up the parts list to do the carb swap on my 00 Ultra.
I'd like to retain the factory cruise control, but from my research, only S&S offers a bracket for the CC. It appears Rivera used to make one for Mikuni, but it has been discontinued. I have no problem going with S&S, but Mikuni was my second choice.
Am I somehow missing a supplier for the Mikuni CC bracket?

Why not look at using a stock CV Carb ? I believe you can get a CC kit for that ?

I'll look into the CV kit, but I've also never had an issue with an S&S after installing several.
I "redneck engineered" a cruise bracket onto both a 44MM CV and a 51MM CV using Gorilla Epoxy. Neither model CV have a shaft for the bracket, so I just epoxied the bracket over the end of the shaft. Been running it on my 1994 96" Evo Ultra Classic f or nearly 10 years now.
OP as far as carbs go I'll say I have a bike with an S&S carb and one with a stock CV carb. They are both drop dead reliable, but in my opinion the CV carb runs a little better and has a little more adjustability (three fuel "adjustments" instead of just two). For me on a twin cam I'd take a stock Keihin rejetted with a raised needle over an S&S any day.
