What bike? On an Ultra you can get her Harley headset and she can control her volume.
Sorry, bike is an 06 FLHX. I'm happy listening to my speakers and as far as the MP3 player goes I think they are a PIA. Even with 500 songs loaded you get tired pretty quick after a week or two vacation. I have XM on the bike and it's so much easier to just turn it on and forget about it. If she had some way to just plug a good set of earphones into the radio it would just make life that much easier. Thanks for the suggestions though.

Thanks for your help guys \\;. I emailed some different company's last night and Chris from Cyclegagets set me up with all that is needed. Turns out they make such an adapter for just my purpose. My wife will now be able to sit on the back of my bike and plug in on her own and tap right in to what ever I'm playing on my radio. Should be a sweet set up with only one small connector hidden under seat for her to tap into.
