I agree -- just ride the bike stock for a while. You may find that your "wish list" changes a great deal after you get to know the bike.
Lots of the HD catalog items look great in the book but don't hold up as well at the stock parts -- they are designed to sell -- not necesarily designed to function well. Talk to people that have experience with the items you are considering. Ask questions other than at the stealership. Lots of places to get better stuff (and cheaper) than at the stealership.
