i don't want to hijack this thread, but i'm in the same boat. if you add the non-adjustable backrest w/ the stock street glide seet can you just remove the pad/bracket if you don't want it on, or do you have to take the whole seat off and remove the entire assembly?

The mounting bracket stays on the fender, under the seat. The backrest pulls out of the bracket through the slot in the seat. If you don't have a slotted seat you can't use a backrest.
I put one on my Ultra right away. Glad I did. Makes it very comfortable and adding the highway pegs its like a recliner. Saves my back a lot of pain. Mine stays on all the time. The wife doesn't seem to mind it all.
What is the installation of these like...pretty quick and easy?
The install of the backrest mounting bracket is simple and a one-time thing. Attaching the backrest after the bracket is in place is literally a three second on and three second off exercise. And when off it fits in the saddlebag. I couldn't imagine not having it for long rides, it makes for a completely different riding experience.
I have an adjustable on mine. The hardest part was running the cable. Still all in all not a hard install at all. One of those mods that I wouldn't give up for anything. I use it with the stock SG seat for around town riding, and use it with the sundowner for longer rides.
