RE: stereos
I went with the Hawg-Wired cradle and bezel kit for 150 dollars, no hand controls, and a JVC AM/FM/CD stereo with 2 Sony 5 1/4" speakers for a grand investment of less than 300 bucks.
I have never needed the hand controls, although I bet they are sweet. The JVC I got has an IR remote but I have never needed to use it. I can get to the radio and make adjustments when I am stopped, and I have gotten pretty adept at doing it while moving too.

RE: stereos
I have the Biketronics setup using the Sony CDX-GT400, Hog Tune Speakers, and I added the XM Satellite Radio module for an extra $99 buck. I couldn't be happier with the performance, ease of use, and looks of the system. I can control everything from the bars including changing the presets on the XM, AM/FM radios and CD player. The Sony also plays MP3 CD's (also controlable from the handlebars) and you can put a ton of your favorite tunes on 1 CD. I got 220 Oldies on one CD .. the music never dies!! My shop charges about $700 for the setup installed including the XM module. Biketronics said they are in the process of manufacturing a rain cover for the Road Glides but already have one for the Ultras.
