Mainly depends on where you want your power band.Do you like it off idle or are you one that likes to go flat out? There are a lot of choices.Good Luck
You may want to look into S&S EZ Start cams if are running Hi compression, but if you run 9.5 and lower maybe look in to about 500/510 lift with medium duration for all around riding
Your cam selection will depend on your compression ratio, valve size, and what was done to the heads when they were reworked. If your stuff doesn't match up you will not have a better running bike. You need to talk to a "knowledgeable" motor builder. Some guys here know their stuff, others don't, but will answer your questions anyway. Anything you do from the air cleaner to the tip of the exhaust affects every other part. You need stuff that works well together. Great cams for one build will be bad for another. Talk to someone who really knows what he's talking about.
S&S recommends the 585 cams for best performance and they are available in the easy start version also. Go to the web page and they give you the lowdown on comp ratio's with stock heads and with S&S heads.

I run this set up with the easy start 583's. I got the 583 because the bandwidth is longer than the 585's. Definitely puts the numbers out too. Let me know how it goes
