It can be done easy.....here are a list of parts but you will have to find your own petcock for your tank this list includes the pingle adapters for my bike.
I'm considering purchasing a 2004 Road King EFI and I'd like to switch to carb as well. Why would you need to buy a MAP sensor if you are switching to a carb? Or is that for the ignition? I think my 93 FXSTC has something like that.

It made a huge improvement on my bike
