It sounds like there are lots of good options, which I guess should be obvious given the number of these bikes on the road. Back when I was an active HOG member the dresser crowd were all running Mustangs or Saddlemen. I'm hoping to slide back a bit so sounds like the Sundowner might be best, will let you know what I finally install and how it goes.
Someone made a good point on bars. It seems guys were putting FLSTS bars on and enjoying them, but we shall see. There are lots of catalogues that lay out all the dimensions so that part should be easy.
The hard part is counting down to The Big Day which for me is late August.
Treat yourself to an airhawk! It doesn't matter what seat you ride, they all feel like a rock after a few hundred miles.
